Baked Sriracha Chicken Wings

Now, onto my 3rd recipe for the day!

Chicken wings recipe is dear to my heart. I remember when I was an intern up to residency, TJ and were savvy goers to those pop up, hole in the wall restos serving chicken wings and burgers. We were then living in a low key city (Quezon City) in the Philippines with lots of hip, budget friendly dine ins and when it happens, those moments tend to be our spontaneous date night which is perfect for struggling medical residents with meager salaries ๐Ÿ˜€

Now that we are facing this lockdown, I’d like to share such easy recipe with you. I have tried so many recipes for Chicken wings, and I think I am confident enough to own it. It’s easy as the ones you browse in various sites. But the win for me is how to make it crispy in the oven and the asian touch of using Sriracha to make it a buffalo like chicken wings.

I’ve tried the baking powder secret ingredient for added crispiness but I failed in it. I find it having such an after taste that I really don’t like and looked for another ingredient that would make it crisp to perfection. So there was one time that my husband was once the master of the kitchen to make his TJ’s signature buttermilk fried chicken, He used various ingredients, and the basic ones for the breading such as flour mixed with corn flour (corn starch), and the likes. So it was a eureka moment for me, for my next chicken wings, that I will use corn flour minus the flour. And… TADA! it was built to be the best chicken wings in our apartment building (claiming it!) and so much so the best chicken wings in my husband’s world. That’s more important ๐Ÿ˜€

Ingredients:

  1. 2 lbs chicken wings
  2. 1 teaspoon olive oil
  3. 1/2 teaspoon salt (rock salt- better)
  4. 1/2 teaspoon fresh cracked pepper
  5. 1 teaspoon garlic powder
  6. 1 teaspoon smoke paprika
  7. 2 tablespoon corn flour
  8. ยผ cup butter
  9. ยผ cup sriracha
  10. Cilantro, scallions, parsley, sesame seeds for garnish- your choice
  11. sour cream from dippings
  12. canola cooking spray

Procedure:

  1. On a big bowl with the chicken wings, add the salt, pepper, garlic powder, smoked paprika and olive oil and marinate for at least an hour to 8 hours.
  2. Pre heat oven to 215ยบC and line a baking tray with baking paper and spray with canola oil
  3. On the marinate, add the corn flour and mix until well incorporated into the chicken
  4. set the chicken on the tray with adequate spacing
  5. Bake for 40 minutes until crispy. If you want more crispiness, add 3 minutes in a fan grill setting.
  6. While waiting for the chicken wings, on a small sauce pan, melt the butter and once fully melted, add the sriracha and mix well.
  7. Once the chicken is baked to your preference, dip the wings to the sriracha butter sauce and place on a plate
  8. garnish with scallions, cilantro, parsley and sesame seeds
  9. serve with sour cream
  10. share and enjoy!

Cooking time: 

  • depending on the time of marinate (1-8 hours)
  • cooking 40 minutes

Serves: 2-3 only as you will gobble up ๐Ÿ˜€
